Description

Infused with Teeling Whisky, this heart warming cake is topped with baked apples and drizzled in a sticky caramel sauce.

Instructions

    Chop up four green apples into chunks ad place into a bowl with the mixed fruit, brown sugar, cinnamon, mixed spice, ground ginger and ground cloves. Stir until combined.

    Whisk together the flour, baking powder and salt.

    Whisk in the oats, brown sugar, whisky.

    Beat in the eggs, one at a time.

    Pour the batter into two greased cake tins.

    Top each of the cakes with half of the fruit mixture and bake in an oven at 180'C for 90 minutes.

    Bring the water to the boil, stirring in the sugar until it dissolves and then add the whisky.

    Add the double cream and leave to simmer for around 10 minutes until sticky but still running.

    Remove from the heat, stir in the butter and then pour half of the sauce over the bottom of the cake, place the top cake on top and pour the remaining sauce on top.

    Serve warm with a little cream.
