Almond Joy Chia Pudding

Here's a dessert that will not only satisfy those comfort food and chocolate cravings, but will bless your body with the healthy benefits of coconut, chia seed, almond and chocolate. Having all of these ingredients together in a delicious pudding makes this a dessert I love. If you are looking for healthy alternatives to dessert; you will like this one. It is dairy free, and sugar free.

You Will Need (8 things)

  • ½ cup Chia Seeds
  • 1 ½ cup Almond Milk
  • 1 tsp Almond Extract
  • 12 oz or 14 oz can Coconut Cream or Coconut Milk
  • ½ cup Unsweetened Shredded Coconut
  • ¼ cup Cocoa Powder
  • ½ cup Xylitol, (or any Sweetener : Coconut sugar, Honey, Sucanat, Stevia etc..)
  • Sliced Almonds and Shredded Coconut for topping

Steps (7 steps, 10 minutes)

    Measure 1/2 cup Chia seed in a bowl.

    Stir in 1 1/2 cups of Almond milk, 1 12 -14 oz can of Coconut Milk or Coconut Cream, and 1 tsp vanilla extract or almond extract.

    Add 1/2 cup unsweetened shredded Coconut. Stir all ingredients together well.

    Mix together 1/4 cup Cocoa Powder and 1/2 cup Xylitol (or sweetener of choice).

    Add the cocoa mixture to the pudding mixture.

    Stir and mix together well.

    Spoon into Dessert bowls and top with sliced Almonds and coconut.
