Refreshingly different iced tea for your hot summer days, made with fresh wild rhubarb and sweet juicy strawberries. Easy as 1-2-3!
Clean your fruit, chop the rhubarb, hull and chop your strawberries. In a large pot, combine the fruit with the water and bring to a boil. Simmer for one hour.
Strain the liquid with a fine mesh sieve into a jug or bowl. Discard the fruit or save for jam. Add sugar to liquid and stir until dissolved.
Let cool completely, then pour over ice, garnish with mint sprigs or a fresh strawberry and enjoy!
