The aussie version of toffee!

  • Step 1

    This is the easy part. You need to put all of the ingredients into a saucepan, and stir until..well, its all mixed up!

    Then you need to put your hot plate/stove on high, which on mine is 6 ( highest). stir this mixture about every ten seconds, and the sugar will start to dissolve.

  • Step 2

    Now, this is where you can make or break your toffee, and you need maxi in the patience category. Your mixture should start to boil rapidly and should start of a clear colour for about 10 minutes while boiling. When the mix starts JUST SLIGHTLY to a gold colour,take it off and let the bubbles subside. When it is still boiling hot, but the bubbles are almost gone, now is the time where you can put in your food colouring!

  • Step 3

    Now, lay out your patty pans/ cases, which are alot better in aluminium, but i just uses regular paper ones, and pour them about 3/4 full. They can take anywhere from 10 mins to 2 hours to set fully. Just before they totally set, you can decorate them with little cachous balls, or even redskin bits, whatever you like...
