My husband is lactose intolerant and was SUPER JEALOUS when our daughter and I would eat ice cream so we can up with this recipe for him.

You Will Need (2 things)

  • Canned Coconut Milk
  • Bananas

Steps (5 steps, 120 minutes)

    You can use over ripe bananas that no one wants to eat. Slice it up and place in the freezer for 2 hours.

    Place the canned coconut milk in the refrigerator for 2 hours.

    Open the coconut milk and pour off the liquid. Scoop the coconut solids in to the blender/food processor.

    Add frozen banana slices and blend until the consistency is close to thick mashed potatoes.

    Serve and enjoy! This is no guilty pleasure!!!
