Last night's dinner was chicken filet ranch and barbecue salad with garlic bread on the side.. I know, not much cooking there, but it's a step up from the microwave meals I used to make.

Melody, your dinner sounds delicious! Tonight my boyf made us green Thai chicken curry, it was so damn spicy and yummy! I then tested my onigiri maker with the left over rice and used my Japanese furikake. edit: so I've made the cakes didnt turn out that well dont really taste like lemon and the icing sugar tastes like its gone off because of the lemon juice! boooo the cake part is nice though.

I bought some Icelandic mascarpone cheese last week to make cheesecake, but all the recipes call for using cream cheese aswell, I ran out of extra cash so I was searching for recipes to use up the cheese in!
Last night a project was posted about Strawberry tarts using the Mascarpone! So I made my own Happy I made my pie cases and used jam I had in the fridge and just mixed some powdered sugar in with the cheese and popped some sliced almonds on top, they were so delicious! Very fattening though hehe

OK i tried to make fortune cookies...the mixture wouldn't go thick enough even with extra flour. The first batch I tried wouldn't cook fast enough but I kept looking in the oven so duuh and so i gave up with that batch. The second batch I just left for 5 mins and the edges went golden brown but I couldn't fold them. It doesn't say to grease the foil on the tray but I think I will do next time which will probably be later when cuz i still have some of the mixture. Also they went all bubbly in the oven! They tasted nice though. And also I'm not used to touching hot things like when my mum cooks something she can move i with her fingers and there's no effect, but they wouldn't fold anyway.

I really want to get better at cooking I can make a meal easily when its stuff bunged into the microwave/oven but I really love the idea of making things from scratch. I can make pancakes (and from scratch) and cupcakes but thats all! I'm making rainbow cupcakes tomorrow and my mums gonna get me some betty crocker frosting which I'm getting you just add water or milk too because that's easier then getting the ingrediants and she's started to shout at how much I keep asking her to get me but she works right near asda! But we're both short of cash at the mo but at least I'm trying!

lemon meringue pie is probably my favourite dessert ever well done! I made rainbow cupcakes yesterday. For Mike's birthday I got him delia smith's how to cheat at cooking, and he really wants to make something from it Happy I think it's a really good start espeically if you don't have the time or money to get all the ingrediants to do everything from scratch.

Lemon Meringue....Yum! I've never had any luck with meringue, but I love it...I'll have to try again sometime. Happy I'm not sure if this counts, but yesterday I made 180 ham buns for my little brothers graduation party. I thought 100 was over-estimating, but as the day went on I just kept making them and they kept eating them. Tongue Oh, I made my very first loaf of bread that didn't collapse in the oven this week! That's exciting for me, even if it did take around 10 loafs in my life before I got to this point.

I made red velvet cup cakes with my friend's kids (5 and 7 year old) last night while she worked on report cards. They're my favorite and one of the few things I can cook really well. Cupcakes, brownies, cakes ... it's a good thing my husband can cook. ;) Of course the kids got batter everywhere and that stuff stains horribly so I'm trying to sound all cool like it's no big deal and inside I'm screaming OH MY GOD MY KITCHEN! MY CLOTHES! AUGH!!!! Luckily they are good kids and helped clean up.

I'm terrible at making messes, or maybe it should be very good at making messes? I can't help it if I get even the tinyest bit of batter on my fingers i spread it every where and ooh god the hooorroooor! I want to make red velvet cakes!

And yeh my boyfriend can cook better then me even if its just putting things in the oven for half an hour I can't cope when I have to cook many things at the same time he is so much better organised so hopefully with this book he can make proper meals and I'll just keep making cakes!

I'm learning to make oriental foods!! Chinese, Japanese, Thai - one of these days my eyes are going to start to slant. I think i was born on the wrong continent. But it should be lots of fun, and i'm sure i'll make a big mess!!!

I also want to try out those rainbow cupcakes.... whenever i play with food coloring it just kind of swirls around and looks silly, but i'll try again!! And to make it more fun... i was going through a box of old fabric scraps, and i found TONS of super cute aprons that my great-grandmother used to make and sell - so now i can bake in style!! Happy
