Cook a Vegan Italian Cold Cut Sandwich in #ABiteToEat with The Herbivorous Butcher in Minneapolis.


How did you get started?

When we made the switch to a vegan lifestyle, we weren't happy with the plant-based meat options we found in the freezer section at groceries stores, so we each started with a basic seitan recipe and experimented at home. Then friends and family encouraged us to start a business, and we debuted at the Minneapolis Farmers' Market in 2014. January 2016, we opened our brick and mortar vegan butcher shop in Minneapolis, and we make and sell vegan meats and cheeses. We also carry a selection of retail products which are all vegan.

Where are you located?

You can find our shop in northeast Minneapolis, across the river from downtown.

What are your specialities?

We make the largest selection of vegan meats and cheeses, so we have many specialties! Korean Ribs and Pastrami are our best sellers. These are seitan, but we also have a small selection of jackfruit-based gluten-free vegan meats. Customers love using our vegan mozzarella on pizza which melts like a dream. Most of our cheeses have a base of soy milk and coconut oil, but we also have a couple almond-based options.

What's your personal favorite thing on the menu?

Aubry's favorites are the Ribeye Steak and Hickory Smoked Bacon.
Kale loves the double cream Muenster.

What's on the stereo?

A little of everything - hip hop (especially by local artists), soul, pop, metal. You name it, we play it.

Where else should we visit in your area?

Many local restaurants have added our products to their menus, so it's easier than ever to dine out as a vegan in Minneapolis and St. Paul. The two all vegan restaurants in town are J. Selby's and Reverie, and they both make a mean sausage biscuit sandwich using our breakfast sausage.

Do you host any special events?

We've hosted fundraising dinners, and our neighbor restaurant has let us grill out on their patio. We're working on raising money for our farm sanctuary, Herbivorous Acres, so proceeds from events help us with our down payment.
