How did you get started?
While living in Toronto working as a model, I decided that I wanted to learn a practical skill. I had always had an interest in the restaurant business since I worked at Boston Pizza when I was 14. After watching 'New classics with Rob Feenie' I decided to move to Vancouver and work for him. After training under Feenie, I traveled and worked in San Francisco, Amsterdam and Spain before coming home to Saskatoon to open The Hollows in 2011 and Primal Pasta in 2015.
Where are you located?
We are located in the iconic Golden Dragon building on the corner of 19th and Ave C South, across from the farmers market.
What are your specialities?
Our motto is High Quality, Seasonal, and Sustainable. We specialize in whole animal butchery, preserving, and we grow most of our own produce for the restaurant.
What's your personal favorite thing on the menu?
The menu is very seasonal and changes often, but right now I'm loving the elk dish, with locally grown heirloom lentils, pickled chanterelles and black currants that we foraged this summer.
What's on the stereo?
A little bit of everything, from The White Stripes to Beyonce, to Dolly Parton... It just depends on the day, and who is working.
Where else should we visit in your area?
We have another restaurant around the corner, called Primal Pasta. The beef heart bolognese is my favorite thing to eat. Other nearby places we recommend are The Odd Couple and Jin Jin Dumpling.
Do you host any special events?
Do We!!! The Hollows operates as a catering company as well as a fine dining restaurant. We host all kinds of events, from rock shows, to weddings. We've even been known to roast a whole animal over an open fire!
Is there anything else you'd like us to know?
The Hollows is home to Goldie's General Store, which is located above the restaurant and sells Vintage clothing, antiques, as well as all of our house made preserves and the soap that we make here in the restaurant, utilizing the left over animal fat from the restaurants.
