In answer to your pancake question. There are two reasons it might spread: (1) the recipe is bad so that there's too much liquid but this recipe doesn't spread like that or (2) you don't have the pan hot enough. My dad makes them on a griddle but I don't have one and I just use a pan on the stove top. Either work fine if you keep it at like 75% temperature. Just be sure it's preheated before you pour the batter on it :)
