I've been looking for cheap dinners to make lately for me and the bf. I made this almost entirely of stuff I had sitting in my fridge/cupboard. Had one can of chicken, but that wasn't quite enough, so I shredded some leftover deli fried chicken from a few nights ago. Mixed it up with a dash of red pepper flakes and Old Bay seasoning, heated it in a pan with oil, chopped bell pepper, and some leftover salsa. Topped with grated cheese, served with spinach/artichoke dip and chips. Yum.
