Small dainty woopie pie cakes filled with butter cream icing.
Small and dainty woopie pies.

These are just a small version of a cup cake that you can eat in one go (depending on how big your mouth is!!!)

They are filled with vanilla butter cream icing and are easy to make.

They are great for kids parties or just a family get together.

Woopie pies are supposed to be baked on a sheet but I prefer to use a small muffin tin. This keeps a uniform shape and ensures a perfect form every time.

    Oven Gas 4

    Cream the butter & sugar together until light & fluffy.

    Add the eggs one at a time and mix thoroughly.

    Add the vanilla essence.

    Add food colouring at this point, mix well to combine.

    Add the flour and stir to combine.

    The mixture will be thicker than usual cake mixes.

    Place spoonfuls of the mixture onto a baking sheet or small muffin tin.

    Cook for approx 15 mins until they are cooked through.

    Remove from tray and place on a cooling rack.

    Once cold fill with butter cream icing.
