Yummy filling little cakes ideal for lunchboxes and picnics.
This is another of my creations, hope you enjoy.

Cookies, brownies & flapjacks wanted something healthier but sustantial for my daughter & her friends on farming days.

I have a few version ideas so look out for them.

    Put your oven on Gas mark 5/190 degrees.

    Place your pure & caster sugar into a bowl, beat with a woodern spoon until light, fluffy & pale.

  • Step 3

    Add 1 spoon of flour & beat, then add a little egg, repeat until egg has all gone. Adding a little flour inbetween the egg prevents the mix curdling.

    Now using a metal spoon fold in the rest of the flour, this traps air to help the mix rise.

    Now add your sultanas, apple & chocolate and fold into the mixture.

    Now spoon into your cake cases, you need to fill them about half ful.

    Now place in the oven for 20-25mins until golden & when pressed with a finger they spring back up.

    Leave to cool. When cool keep in a food bag best used with in 3 days.

in te wholemeat lunchbox suprises there are no caster sugar or an egg in the resipe but in the directions how to bake it you talk about caster sugar and an egg...
