Victoria Sandwich Cake
This is a very easy to make.

You can use any flavour jam you like but strawberry or raspberry is best.

    Heat oven 180 degrees

    Cream butter & sugar together.

    Add eggs one at a time.

    Mix well.

    Add vanilla.

    Mix together.

    Add flour & baking powder.

    Mix well.

    Bake for approximately 40 mins until done.

    Allow to cool completely.

    Cut cake in half.

    Cover base with jam.

    To make the cream...

    Mix gelatine & cold water together.

    Allow to sit for 5 mins.

    Beat cream together until soft peaks.

    Add sugar.

    Beat through.

    Add hot water to gelatine.

    Stir through.

    Add gelatine mix to cream & fold through.

    Add cream on top of jam & place the top of the cake on top.

    Sprinkle with icing sugar.

    Cut & serve.
