perfect for a vegetarian barbecue
Ooook, the picture doesn´t look so tasty because everything is covered with onions, but they look really like real duck legs and tase very good!
I found the recipe here:

As the broth has to reduce, it will be best to start with step number 7 before you make the seitan.

    First, you have to make the seitan - which basically means that you have to "wash" the flour, until only the gluten is left.
    You can either buy pure gluten or use one of the several techniques found in the internet.
    I prefere this very quick and less messy way:
    1) You´ll need the flour...

    3) Put it into a colander, turn on the tab, and "wash" the dough, while kneading it. You will have to do this for at least ten minutes.
    The seitan is ready, when the water stays clean and the dough looks and feels like thick chewing gum. It´s original size should be reduced to about 1/3.

    4) Use some sticks (f.e. chopsticks; I used some clean bamboo-sticks from the garden), divide the dough into 8 parts, and wrap each part around one stick.
    If the seitan is not sticky enough or easily breaks, you´ll have to wash it again.

    5) As the seitan has no taste of its own, you will have to boil it in broth or marinade. Cook it for about 5 minutes on high temperature, then turn down the heat and let it simmer for about 30-60 minutes. The seitan will double its size, so use a big pot!

    Let it cool down, put the "duck legs" into tupperware, cover it with marinade and let it marinade for about 3 or 4 days.

    Recipe for marinade:
    Roast the chopped onions,
    add all the other ingredients and let it reduce.

  • Step 8

    Use aluminium foil to protect the sticks, if you want to grill the "duck legs".

I had seitan bourgineon while I was in Paris and thought it was absolutely delicious, but I'd never encountered seitan before so thanks for explaining how to make it! Happy
