Ah, have you seen the Goonies? These are just truffles, but you can shuffle them if you'd like. Apologies for that godawful header pic. I'll take a better one tomorrow.

Description

Ah, have you seen the Goonies? These are just truffles, but you can shuffle them if you'd like. Apologies for that godawful header pic. I'll take a better one tomorrow.

Instructions

Bring the cream to a rolling boil, stir it a bit - don't let it stick.

  2. Small pict0031 1271357091

Meanwhile (don't leave the cream! Stand close by, ok?), smash up the chocolate in a big bowl. You can use aaany kind, but I wouldn't go too fancy 'cause the process takes most of the poshness away. I'm using dairy milk here, but I've also used ASDA's own brand, and it turned out really well. Milk, dark or white? All are lovely, my personal favorite was the white (nom nom).

  3. Small pict0032 1271357348

Really quickly, pour the hot cream over the chocolate (you don't have to melt it, the cream does that now). Mix it upp. (it looks pretty gross at this point, stick with it)

Ah, lovely. You want it at a strange consistency- I think it's quite like the kind of chocolate pudding you get in baby food. The main thing is it needs to be EVEN.

  5. Small pict0034 1271358236

Fill a sink with cold water. I didn't think of this at the time, but some ice cubes would speed this up nicely.

  6. Small pict0035 1271358286

Put the bowl with the unset truffles in the sink. ##REALLY IMPORTANT## DO NOT get any water in it. It really meffs it up.

  7. Small pict0036 1271358467

While you leave that to set, grate some chocolate. I used white, so that it'll stand out against the milk and dark.

  8. Small pict0037 1271405557

You know the truffle's are set when you jiggle the bowl and it doesn't move much. (ah, I guess this is the truffle shuffle, eh?). It's a trail-and-error thing, really. try making a blob with two spoons and see if it can hold it's own. Ok, once you're happy, make a trillion blobs with teaspoons. Like they do on masterchef. Oh, effort :c

Melt some chocolate, and carefully roll your little balls- Ah! sorry, I just have to stop and have a chuckle; I just typed "roll your little balls" (!) -roll them in the melted choclolate. Be careful and quick, you don't want the truffle getting too warm and squishy. Add the grated chocolate, as soon as it's out of the melted chocolate, those things set fast.

  10. Present to friends and family, accept wonderful compliments and insistance that you should open a chocolate shop... c:
