I saw a couple of different recipes for tomato soup with ravioli, and I decided to change it so it's healthier, vegetarian, without milk, and much less fattening.
1 package tortellini
1 cup soymilk
1 tsp better than broth (or 1 bullion cube)
1 small roma tomato
green onion & garlic to taste
1 can tomato soup
1 tsp thyme
oregano to taste
salt and pepper to taste
Boil the tortellini until al dente. Drain all water except for 1 cup, stir in better than broth base.
Combine all ingredients, bring to boil then reduce to low, and Season to taste.
