Tofu Pita Pockets

Tasty animal friendly pita pockets.

  1. Step 1

    Step 1

    Chop up the vegetables and start preparing the cous cous. While it is cooking you can prepare the rest of the meal.

    Fry your mushrooms in a pan over a high heat using a small drizzle of olive oil. Add the peppers and garlic and fry until all the vegetables are soft.

  3. Step 3

    Step 3

    Add the tofu and leave to cook over a medium heat for a few minutes. Don't add anymore oil or it will splatter up and attack you.

  4. Step 4

    Step 4

    Toast the pita, in a toaster or under a grill, for about a minute at a medium heat setting. They will become soft and expand.

  5. Step 5

    Add some spices of choice to the tofu and vegetables and then mix in the pesto.

  6. Step 6

    Step 6

    Cut the pita in half and fill each half pocket half full with cous cous and then fill with the tofu and vegetables. Add a little sour cream if you like.

Excuse me dear, but that isn't a spanish recipe.
It seems to be yummy but not spanish at all. I think you put it on the "spanish recipes" by mistake.

Looks yum, kaiti made them and they tasted really nice except she didn't have any pesto so she used this veggie spread and she put in tomatos instead of onions and lost half the tofu down the side of the fridge as she dropped it!
I plan to make them now but what is RED pesto?
