Even if it does look pants!

This was the first time making this and it tastes amazing....even if the icing was a bit too runny....my fault for not following the correct amounts! :p
My first time doing a how to and hopefully it will make sense! Sorry for lack of pictures, i didnt think to take any at the time.


Crafts

Recipe

    Gather all your ingredients. Grate the carrot before starting as I didnt and underestimated how long it would take to grate 350g (took me like 25 minutes and losing nails and fingers!!)
    Preheat oven to 180 degrees.

    Mix together the flour, sugar and cinnamon. Adding the eggs and oil and mixing well. (Might just be me but this is a weird texture and i just kept stirring it like a little kid! :P)Add the carrots and nuts. (dont be put off by how it looks!!)

    Divide evenly between the 2 cake tins. I put a tiny well in the middle so that it rises evenly. Bake for 25-30 minutes.

    Icing:
    Cream together the margarine and cream cheese, adding the icing sugar and blending well. Add the vanilla and mix well until smooth. This should be more than enough to fill the cake and cover. I have a pot in the freezer ready for next time.
