The mix of potatoes and coconut may sound strange to you guys but it tastes really good in the end! And includes no fat so it's perfect to stay in shape and eat yummie baking things. :D I am intollerant against gluten so the recepie is perfect for me but you can use wheat flour instead of gluten-free flour mix.

The mix of potatoes and coconut may sound strange to you guys but it tastes really good in the end! And includes no fat so it's perfect to stay in shape and eat yummie baking things. :D I am intollerant against gluten so the recepie is perfect for me but you can use wheat flour instead of gluten-free flour mix.

Instructions

  1. First of all you boil the potatoes and allow them to cool completely. Now mesh them and mix with the coconut powder. It'll look really strange to you but in the end it works! Now mix the eggs, sugar and the water together until it's creamy. Afer that you mix flour and baking powder together with a little bit of salt. Mix well. :) When you have the two parts done you mix it all in a big bowl until it looks softy. You can make 10 - 12 little Muffins or one bigger cake. Bake the Muffins for ca. 15 Minutes and the cake a little longer. Maybe 25 Minutes. Perheat the oven up to 170°C and bake it the same.
