Prepare your veggies... slice in long thing strips for best results. If anything needs to be cooked do this now.. like saute the mushrooms or cook any other meat your going to use.

put rice on the paper and arrange filling long ways across the paper.
Another CO+K sushi project said to keep a bowl of warm salt water to wet your hands on so the rice doesn't stick... great idea, will do that next time!
We used the small hand roll sized paper and simply added another sheet to wrap around the finished roll so it would close and look nice. If your using full size paper youll want to only do rice about half way up.

Yum, I love sushi. I tried making my own last night but it all seemed to fall apart when I tried to cut the strips in to slices. Do you have any tips or do you think my knife just wasn't sharp enough? :)

Sushi making kits are neat..but they are expensive, here anyway. The ones ive seen come with a mat, chop sitcks a few packets of soy sauce and some powder to mix wasabi. The mat i used in the picture is actually a place mat i bought at the dollar store... be creative and dont waste your money on a kit that isnt worth it.. if your going to spend that sort of money on your project spend it on higher quality ingredients, not pre packed kits! Your taste buds will thank you!!!

Cat- A sharp knife is very important. if the knife doesnt work try a straight razor blade to start the cut and get through the paper. Make sure whats in your roll isnt too hard to cut... my first batch was a disaster because i used fresh carrot.. impossible to cut, so i steamed them a tad for the second round and it worked just fine.
Something else that will help is make your roll while the rice is still warm, itll spread easier and the sushi paper will be soft and pliable from the steam. Once you have your long roll let it sit and coll for a bit till the rice is room temperature and the paper is a bit stiffer... makes it easier to saw through. If it still gives you problems you can just cut your roll in half and have big pieces of sushi!
