So I really wanted French Onion soup tonight but I was beat from work and totally broke..genius is truly fed at the breast of necessity.. Oh, and not my pic, rememeber the last time I was cooking with the camera around..:(
Boil 2 cups of water and add the flavor packet from a package of Beef Ramen Noodles. Save the dry noodles, crumble them up for crunchy salad toppings or something creative.
Add the onions, and simmer on low heat for about 10 to 15 minutes. The longer you cook them, the softer the onions, but the more oniony the broth.
While your onions are cooking, toast the bread. You can use any kind of bread, I think an artisan bread like an asiago cheese loaf would be delish.
Pour the finished broth in an oven safe bowl, put the bread on top, cover with cheese, throw in the broiler until cheese is golden and bubbly.
15 minutes and low budget onion soup perfection!
