  1. Step 1

    Step 1

First take the 1/2 cup sugar and 1/2 cup water and carmelize by bring the mixture to a boil until it get light brown in color.

Next, bring to a simmer until it is more carmely in color.

Then pour evenly in ceramic dishes.

*Don't forget to preheat oven to 350 degrees

  2. Step 2

    Step 2

    Next is the custard part.

Pour in half a can of both evaporated and sweetened condensed milk, five egg yolks, 1/2 tsp of vanilla extract.

Stir gently with a whisk to avoid bubbles until very well mixed.

Strain through, I used a wire mesh one to ensure no clumpyness.

  3. Step 3

    Step 3

Pour mixture evenly into dishes and cover each with foil.

  4. Step 4

    Step 4

Place in a square pan (you can put a tea towel on the bottom of the pan to minimize slipping)

Fill with hot water and inch up the sides.

Put in the oven for 40 minutes (5 minutes more or less) I like to turn it half way into the cooking.

  5. Step 5

    Step 5

To check for doneness, insert a knife and if it pulls out clean it's done.

I like to refridgerate mine and eat them chilled
