To make things really easy, grate all the cheese in to a bowl before you start.

Lay a tortilla bread on a plate, sprinkle half of the cheese on top and then sprinkle with the paprika and piri piri (you should adjust these amounts to make it hotter or cooler, to you preference).

Lay a second tortilla on top and sprinkle half of the remaining cheese (half a cup) on top.

Heat up the oil in the frying pan and then pop the tortilla in. Cook for a minute, so that the cheese becomes nice and runny.

Flip over, cover the top with cheese and cook for another minute. Flip over again and cook for a further 20 seconds before removing the pan from the heat.

Cut the tortilla in to little triangles, place in a bowl and serve with your favourite dips.

Those are great dipped in salsa! It's basically a quesadilla really. I make this all the time except because I don't use the oil...just a non stick pan!

They have nando's in Australia too, the food is so good. It definately deserves to be called a fast food "restaurant".
The tortillas look yum by the way, I probably wouldn't add so much cheese myself though.

They're all over the place. There's some in London, Oxford, Bath, Bristol... Just go to a main city and you'll probably find one.
