Super Cheesy Tortillas

Really really really cheesy tortilla chips.

To make things really easy, grate all the cheese in to a bowl before you start.
Lay a tortilla bread on a plate, sprinkle half of the cheese on top and then sprinkle with the paprika and piri piri (you should adjust these amounts to make it hotter or cooler, to you preference).
Lay a second tortilla on top and sprinkle half of the remaining cheese (half a cup) on top.
Heat up the oil in the frying pan and then pop the tortilla in. Cook for a minute, so that the cheese becomes nice and runny.
Flip over, cover the top with cheese and cook for another minute. Flip over again and cook for a further 20 seconds before removing the pan from the heat.
Cut the tortilla in to little triangles, place in a bowl and serve with your favourite dips.

yummy!! Piri piri, is that the stuff they have in Nando's? I loved that place when I lived in the UK!

Nandos is a poshish fast food restaurant specialising in like KFC type chicken, except dead spicy. And yeah it is Piri Piri :-)

These things are just like mini Quesadillas. yummmmm

They're all over the place. There's some in London, Oxford, Bath, Bristol... Just go to a main city and you'll probably find one.

They have nando's in Australia too, the food is so good. It definately deserves to be called a fast food "restaurant".
The tortillas look yum by the way, I probably wouldn't add so much cheese myself though.
