Super Chicken Noodle Soup!
Leftover Chicken,4 handfuls of fresh spinach, 5 large carrots, 3 stalks celery,1 sliced onion,s cup of sliced mushrooms,2 tsp of parsley, salt to taste, pepper to taste, pinch of sugar,bay leaf,homemade noodles, and some quinoa - about 1/2 cup........eye of newt- fresh is best, optional.
I like to turn leftovers into new meals....recycling at it's best.
So, if we've had baked chicken the night before, it's a safe bet we'll have Chicken Noodle Super Soup within a day or two.
I always start my soup with water, then add the whole chicken and bring it to a boil. I strain the broth to get all the bones and bits out,and toss all but the meaty pieces.
Add the meat back to the broth, throw in everything but the noodles, and let it simmer.
I add the noodles into the soup at the last 10 minutes or so, they come out really good and thicken the broth.
