Strawberry and Lime create a cool taste of the Tropics!
I found this recipe at www.bettycrocker.com and used it for a friends party. Everyone loved it!

Here are a few tips to remember before you get started :)

*You'll want 4-5 Limes to have enough grated lime peel for this recipe.

*Rinse and slice the strawberries, then place them on a paper towel in the fridge for about 10 min. So that all the water is absorbed. If you place them directly onto the cake after slicing, they may be too juicy and water down the frosting.

*Adding Lime to the either the cake or frosting is optional, but not to both!

*For a whimsical touch add a paper drink umbrella to each piece of cake!

  • Step 1

    ~CAKE~

    Heat oven to 350'F. Grease a 13x9in pan.

    In large bowl, beat cake mix, water, oil, eggs, gelatin, 1 Tablespoon lime peel and rum extract with mixer on low until mixed, then on meduim for 2 min. Pour into pan.

    Bake 35-40 min or until toothpick inserted comes out clean. Cool completely, about 1 hour.

  • Step 2

    ~FROSTING~

    Stir 2 teaspoons lime peel into frosting. Spread evenly over cake. Store loosly covered at room temperature. Just before serving top each piece with a strawberry garnish.

    ~ENJOY~
