My mother had suggested using Spinach instead of Basil in Pesto, my sister switched it up with Walnuts.

Spinach Walnut Pesto

Wash a lot of Spinach!
-
Chop up some walnuts
-
Mince some Garlic (or use a handy dandy garlic press!)
-
Toss the ingredients into a blender or food processor
-
Drizzle in some Olive Oil (I also added just a bit of water)
Add some Salt and Pepper to taste -
Blend away! Until it reaches a nice pureed consistency!

Mix it with some Pasta, or use it as spread on a burger, or anything else you can think to put it on...
