Omelette with a bit of south of the border flavor for two people
This recipe is for an omlette that you cut in half in the pan and will serve two people.
The omelette has a little bit of a kick, but if you have a picky eater that doesn't like a lot of different things or too much spice, like my son, you can skip topping that portion with salsa.

Step 1Gather the ingredients

Step 2Turn stove on low heat and add the 2 tbsp of margarine

Step 3While the margarine is melting, crack the eggs in a bowl then beat them briskly.

Step 4Once eggs are beaten, add 2 tbsp to make the omellette fluffy.

Step 5Add 1/4 tsp coriander. If you like, add a few dashed of seasoned salt (I used 2 shakes)then beat mixture until blended.

Step 6By this time the margarine should be melted. Swish it around the pan so that bottom and edges are coated.

Step 7Pour egg mixture into frying pan and turn up to medium heat and cook until they look like this.

Step 8Sprinkle the cheese over the top.

Step 9Flip one side of the omellette onto the other side.

Step 10Cut the omellette in half with the spatula.

Step 11Spoon on the salsa (if desired)then serve.
