I was challenged on one of the board discussions to post a traditional recipe. It's hard to know what is a true traditional American recipe. The US is made up of many many different cultures.
So, since I'm African American, I though I'd post a soul food recipe. For me, this is traditional.
BTW...if you don't eat pork, you can use boneless skinless chicken breast it's equally delicious and more healthy.
Heat the oil in skillet over medium heat.
-Season the meat with season salt and pepper, to taste.
-Dredge the meat in the flour mixture and add to the hot oil
-Brown on each side and remove from skillet
-Add the vegetables to the skillet and saute until tender.
-Sift in flour and stir.
- Drop in boullion cubes
Return the meat to the pan and add a 1-2 cups of water
-Cover and cook until tender, approximately 25 minutes.
Serve with white rice, green beans and cornbread or biscuits.
