a winter warmer (: (apologises for the bad photo!)
My favourite and go to soup is carrot and coriander, but since it was so cold out I thought I'd try a spicy tomato, made this up on the spot and it was great (if I do say so myself)!

    Heat oil in a saucepan, add in chopped onions and place lid on top until onions have softened. Add garlic and paprika, return lid and leave for 2 mins. Next add your sweet corn and spinach and give it all a big stir! Rehydrate your chili (if you are using one, you could use a normal chipotle or any chili really) in the veg stock then add to the saucepan. Add your tinned tomatoes and stir it all in with a bit of black pepper. Take off the heat and blend. Add your sundried tomatoes and blend again (this helps to strengthen the taste of the sundried tomatoes by blending them in last). Serve with as much black pepper as you like (:

    P.S.(I don't add salt to soup when I'm using veg stock as I think its salty enough as it is, but add some when serving if you want!)
