  • Step 1

    Get a bowl and remove the skin from the mackerel and flake into little bits, add the grated beetroot and apple, the flour, salt, herbs and egg, mix and combine.

  • Step 2

    Put a large frying pan on the heat add approx 1cm depth of oil and heat until hot. Put a little spoonful of the mixture into the oil, if the mixture breaks up, add more flour to the mixture in the bowl and try again.

  • Step 3

    Put spoonfuls of the mixture into the oil and fry until golden tinges can be seen, flip them over and do the same on the other side. You may have to do a couple of batches – this quantity of mixture will probably make around 8 fritters.

    Serve hot with some salad.
