Fresh and super fast main meal
This is a great summery low fat meal that I adore, it's so fresh. It takes literally little to no time to make and it's all with a total of 151 calories per serving which is brilliant when you are on a 1200 cal diet like myself. Yeah it's diet good that's low in fat etc but taste it before you judge it please lol trust me its worth it :D

    Place the fillet slices into a bowl. Coat with the ginger (4 tsp), orange juice (4tblspn)and sweet chilli sauce. Leave for about 10 -15 minutes.

    Heat frying pan until hot, add oil. Add the slices of pork, cook over moderate heat two to three minutes, or until the pork is lightly browned on the outside. Remove from heat and allow to rest for 1 -2 minutes.

    I generally gtill mine because it drains any excess fat left in the pork

    Put the capsicum, red onion and granny smith apple into a bowl. Place even amounts of rocket lettuce on four plates.

    Put a few slices of pork on top of the rocket, add salsa to top tgen add another couple of slices of pork and finishing with more salsa on top.

    Place all yogurt, orange juice (1tblsp), zest, honey and ginger (1/2 tsp) in bowl and mix well until combined. Drizzle the sauce over the top of the pork and the salsa. Serve immediately.
