  1. Step 1

    Step 1

Purchase your Rice Paper, it will look similar to this!

  2. Step 2

    Step 2

To use the rice paper, you'll have to soak it in warm water. I keep a pan with water on low for this process.

  3. Step 3

    Step 3

Have your vermicelli ready and waiting. To use, just soak in hot water until it is reconstituted.

  4. Step 4

    Step 4

Have your filling prepared. I use cucumber, red pepper, carrots and lettuce.

  5. Step 5

    Step 5

Place your lettuce off to one side of the rice paper circle, its difficult to see that the rice paper is there cuz my plate was white!

  6. Step 6

    Step 6

    Add the vermicelli.

  7. Step 7

    Step 7

    Add your julienne carrots

  8. Step 8

    Step 8

Add your cucmber (I use english) and your red pepper strip.

  9. Step 9

    Step 9

This is where you add chicken, or not for a veggie version. To make the chicken, I just put a chicken breast into a broth that I'll have for soup, if you wanted to, you could soak your vermicelli into the broth later on for more flavour, but that is entirely upto you. When it is good and cooked, I let it cool down, then pull it apart into shreds.

  10. Step 10

    Step 10

    Fold one side over filling.

  11. Step 11

    Step 11

Then fold the two sides over, and roll.

  12. Step 12

    Step 12

Your final product should look something like this. I should have cut it in half so could see it, but its too late now, we at them all! Serve with a sweet chili or peanut sauce.

I made these in my cooking class. We added bean sprouts. A peanut sauce is a great idea though!

You can just use hot water straight from the tap and put it into a bowl instead of putting it in a pan.

You can use pretty much anything you want as the filling. This just happened to be what I made that particular day.

As for spring roll wrapper, as long as it is the kind that has been dried and you need to rehydrate it, that should be fine.

And yes you can just use warm water, I just happen to like keeping the water warm because I make dozens at a time.

Thanks for all your comments!
