An aromatic lime & rosemary infused gin gimlet
This gimlet combines Daffy's Gin with homemade rosemary syrup and lime juice for a sweet, aromatic cocktail.

Step 1Bring the water to the boil in a sauce pan and add the sprigs of rosemary.

Step 2Leave to infuse for an hour and then remove.

Step 3Pour in the sugar.

Step 4Stir to dissolve.

Step 5Squeeze in the juice from the lime.

Step 6Pour into a bottle and keep in your bar.

Step 7When you're ready to make a cocktail, fill a cocktail shaker with ice and add the gin and 1.5 ounces of syrup.

Step 8Shake well and strain into a cocktail glass.

Step 9Serve with a sprig of rosemary.
