Mix vanilla cake mix according to directions on box.
Here's a twist from how you usually mix cupcakes... Now is the time to add 2 teaspoons of root beer concentrate. It has to be root beer CONCENTRATE, not just root beer!
Mix well :)
Place paper cupcake cups into tin, then fill them a little more than halfway. Bake according to box.
Let cool completely after baking (you can put it in the fridge to speed up the process).
Now to start on the icing! Put container of whipped topping (12 oz.) into a mixing bowl.
You're not quite done with the root beer concentrate yet! Mix 2 teaspoons of it in with the whipped topping.
Once your icing looks like this...
You can spread it evenly on top of your cupcakes :)
Keep your cupcakes in the fridge for storage. For more pleasing display, serve vanilla ice cream as a side, accompanied by a glass of root beer (or, even better, serve cupcakes with a root beer float)!
