• 

  Step 1

  1.Preheat oven to 180°C/350°F/Gas Mark 4. Put 12 paper muffin cases in a muffin tray.

  2.Blend the cocoa powder and hot water together and set aside.

•

  4.Gradually beat in the eggs then beat in the blended cocoa.

• 

  Step 4

  3.Put the butter and sugar in a bowl and beat together until light and fluffy.

• 

  Step 5

  5.Sift the flour, and using a metal spoon, fold gently into the mixture.

• 

  Step 6

  6.Spoon the mixture into the paper cases.

• 

  Step 7

  7.Bake the cupcakes in the preheated oven for 20 minutes or until risen and firm to touch. Transfer to a wire rack and leave to cool.

  Step 8

  8.To make the topping, stir the nuts into the melted chocolate and spread a little of the mixture over the top of the cakes.

• 

  Step 9

  9.Lightly stir the marshmallows and cherries into the remaining chocolate mixture and pile on top of the cupcakes. Leave to set.
