Easy to make Rocky Road Cheese Cake
A Delicious cheese cake. Easy to make.
This is super simple to make and you can add anything to the mixture and it will work.
If your not fussed on cherries these could be replace with an alternative that you do like. I would not suggest any item that has a lot of moisture.
Like wise with the other ingredients, although this wouldn't make it Rocky Road, but it would be tasty.

Step 1Crush the biscuits to make fine crumb.
Melt the butter and add the crushed crumb to it.
Mix thoroughly until the all the crumbs are coated in butter.
Press into a 12" tin and leave to set while you make the cheese mix.

Step 2Melt 12oz of the chocolate in a bowl.
Add the icing sugar & cheese to another bowl.
Mix the cheese & icing sugar together until combined.
Add the melted chocolate to the cheese mix.
Mix together until combined.

Step 3Add the cherries, crushed cookies & marshmallows.
Mix through.
Add to the top of the biscuit base.

Step 4Melt the remaining 4oz of chocolate.
Pour over the top of the cheesecake & refrigerate over night.
The cheesecake can be eaten after an hour of refrigeration but will set up better then next day.
