Plain steamed rice cupcakes

My Uncles Girlfriends friend made these for our Easter dinner. So good, but so odd, I had to have the recipe. No pictures yet, some will be coming soon I hope. And after looking at the name of these in the Philippines, I decided to post the American translation of them, as it's kind of a dirty word in Spanish. The name of this dish is Puto.

This yummy dish can be eaten in place of anything you would use rice for, it isn't as sweet as it seems.
It's also very sticky.
20 seconds for re-heating in the microwave, and they freeze well.

Recipe

  1. 1

    Plain Steamed Rice Cupcakes

    5 C Rice
    1 1/2 cans Coconut Milk
    1 C White Sugar (Splenda)
    2 Tbsp Baking Powder

Soak the rice in water over night.
    Drain the rice.
In two batches, as to not burn out your blender, put half the rice, half the coconut milk, half the sugar and half the baking powder into your blender and blend on #10 (or liquidize) until the rice is liquidized.
Repeat with the other half of the rice, milk, sugar, and powder.
Strain the liquidized rice with your mesh strainer, pick out any big grains of rice.
In tin foil cups that have been doubled (or tripled) fill 1/3 of the way full with the mixture and steam them in a steamer for 25 minutes or until a toothpick inserted in the center comes out clean.
