Rainbow Jelly Jigglers

Easy and colorful St. Patrick's Day treat!

This was a big hit with my family.

It is very easy - just mixing gelatin and boiled water; however, you would want to start this project at least a day in advance is there is a set up time in the fridge of 3 hours between each layer.

  1. Step 1

    The basic receipe for Jigglers from the back of the box of Jello is
    - Stir 2 1/2 cupson boiling water (DO NOT ADD COLD WATER)into a 4 - 4 serving each size (3 oz box) and stir until dissolved.

    As these are being layered, and depending on the width you want the finished rainbows to be you could cut the receipe:

    In half: 1 1/4 cup of boiling
    water and 2 small boxes or
    1 large box for each layer
    or

    Into 1/4: Use 5/8 cup of boiling
    water and 1 small box

    At Walgreens, I was able to get Royal Gelatin in Red, Green and Orange for 3 small boxes for $1. However, they didn't have yellow, blue or orange nor did the store brand.

    I ended up buying a small box each of yellow and blue Jello gelatin.

    For the purple I mixed a red box with a green box of Royal gelatin and added 10 drops of blue food coloring
    (the pictured project is approx 2 boxes of gelatin per layer - 1 box for each layer would produce a skinnier rainbow)

    Pour the boiling water into the red gelatin and stir 3 minutes until dissolved.

    Pour into pan (I used the top off of a commercially prepared 1/4 sheet cake, but you could use a 9" x 13" pan or several small pans).

    Allow to set at least 3 hours.

    The next layer of the rainbow is orange.

    Pour the boiling water into the orange gelatin and stir 3 minutes until dissolved.

    Pour the orange gelatin on top of the red gelatin and put it in the fridge. Allow it it set at least 3 hours.

    The next layer of the rainbow is yellow.

    Pour the boiling water into the yellow gelatin and stir 3 minutes until dissolved.

    Pour the yello gelatin on top of the orange gelatin and put it in the fridge. Allow it it set at least 3 hours.

    The next layer of the rainbow is green.

    Pour the boiling water into the green gelatin and stir 3 minutes until dissolved.

    Pour the green gelatin on top of the red gelatin and put it in the fridge. Allow it it set at least 3 hours.

    The next layer of the rainbow is blue.

    Pour the boiling water into the blue gelatin and stir 3 minutes until dissolved.

    Pour the blue gelatin on top of the green gelatin and put it in the fridge. Allow it it set at least 3 hours.

    The next layer of the rainbow is indigo and violet - for this project just use purple or violet gelatin

    Pour the boiling water into the purple gelatin and stir 3 minutes until dissolved.

    Pour the purple gelatin on top of the blue gelatin and put it in the fridge. Allow it it set at least 3 hours.

    After last layer is firm, take out and cut the layers into circles with a cookie cutter or a cup (run the cup under warm water first). If you use a cup, this part would be super fun for kids as it makes a "thwack" when you pull the cup out and the layers slide back down in the pan.

    Remove each circle from the pan.

    Cut each circle in half.

    Set each half circle up on the cut edge and you have a rainbow!

    Pictured to the side is two halves side by side that were turned up after I cut them.

    Serve on a decorative platter, plate or glass.
