    Heat olive oil in a medium skillet over medium heat. Add garlic and saute for a minute, stirring. Add spices and salt. Stirring constantly, cook spices until fragrant (1-2 minutes).

    Add tomato to skillet. Cook, stirring occasionally, until tomato is slightly softened and a sauce has formed (about 5 minutes).

I made this last week for my nieces and nephew aged 9 to 15 and they loved it! They were even fighting over seconds! I used a tin of chopped tomatoes as didn't have any fresh and I added a good squeeze of fresh lime. It was delicious. I made it again tonight for my very carnivorous partner and added a spoon of mango chutney along with the lime and was told it was the best curry she'd ever eaten! Didn't even miss the meat! Thanks so much for sharing x
