Delicious fruit cake with a twist

Welcome to another yearly family favorite.

My daughter always takes a huge slice in her lunch box, so never lasts long!

This cake mixture also works well in the tins that have a hole in the centre i.e ring or Kugelhopf pan-if using one of these bake at Gas mark 4 only.

  1. Step 1

    Pre heat oven to Gas mark 9

    Cream marg, sugar and syrup until soft.

  2. Step 2

    Gradually beat in eggs.


  3. Step 3

    Step 3

    With a metal spoon fold in the flour and mixed spice.

    Stir in mixed fruit.

  4. Step 4

    Step 4

    Gradually mix in the pumpkin to make a soft cake consistency.


  5. Step 5

    Step 5

    Put mixture into a greased and lined 8 inch cake tin.

    Place in the centre of the oven and bake for 15 mins,

    THEN reduce the heat to Gas mark 4 and cook for 45 mins.

    Test by putting a skewer or knife in the centre and if comes out clean your cake is done.

    Leave to cool in tin for a while before turning out.

I love pumpkin!!!!! Seriously, I love pumpkin beer, pumkin muffins, pumpkin ravioli, pumpkin fudge... u name it, if it's pumpkin I want to try it... can't wait to try this!!!! Thanks for the posting!!!!!!

I have used Butternut squash before to replace the pumpkin if you can't wait for the pumpkins!
