Pear Upsidedown

It's pears. Upsidedown.
 <  Image 1 of 2  >

I have been making this pudding for years and it is now a family favorite.

Great served hot with custard on those cold wintery days.

Warm with spoon of rice pudding or ice cream on the side.

It tastes just as good cold.

I would advise to keep any left overs in the fridge covered with cling film - keep lovely and moist.

  1. Step 1

    Step 1

Turn oven on to Gas 4, 180 deg c or 350 degrees F

    Line your cake tin.

Melt 1oz of the marg and stir in the brown sugar.

  2. Step 2

    Step 2

Pour the melted mixture into the lined tin.

Then place pears cut side down on top and leave to one side.

  3. Step 3

    Step 3

Cream the remaining marg and the sugar until pale and fluffy.

Gradually add the eggs, add a little of the flour in between if the mixture begins to curdle.

  4. Step 4

    Step 4

Fold in the flour until combined.

Should be a dropping consistency, if not you can add a little pear juice or milk.

  5. Step 5

    Step 5

Spoon ontop of pears and then smooth ensuring that no pears or marg and sugar mixture are showing.

  6. Step 6

    Step 6

Bake in the oven for 1 hour or until centre springs back when pressed.

Leave to stand in the tin for 5 mins

  7. Step 7

    Turn out onto a plate.

Now it's ready to eat, enjoy :D
