Step 1Cut the top of the stalk off your pear and place on the side of your glass. Cut the remaining pair into strips and place in a cocktail shaker. Add some ice and muddle the pear.

Step 2Add the cardamom gin, simple syrup and squeeze the lemon juice into the cocktail shaker. Shake well to break up the pear.

Step 3Strain into a martini glass and serve.
