These are mini and regular sized vegan golden vanilla cupcakes with cookies n' cream frosting (vegan fluffy buttercream frosting with chocolate sandwich cookies).
I used Health Valley sandwich cookies which taste almost like oreos.
I broke some of the cookies in half to put on top, and crushed some up to mix with the frosting for the others.
I brought these to work, and no one had a clue they were vegan. Num. Num.

I love this book! I had it at home and made the chocolate ones and the sexy vanilla low fat ones for Easter and no one knew they were vegan until I told them! They tasted so good it should have been a crime!
