Mountain Dew Cake

For mine and my boyfriend's 2nd anniversary today, I decided I'd make a Mountain Dew cake (Mountain Dew is his favorite soda, and he and his friend have been the 'Dew Knights' for the past few years at Otakon). It worked out surprisingly well, and it's very tasty. Mine is particularly ugly, but that's because I ran out of frosting, and I've never been very good at decorating cakes.

I don't have pictures for each step, but I don't think it's necessary...it's really easy to make!

  1. Step 1

    Preheat your oven to whatever temperature your cake mix calls for. Throw your cake mix (and however many eggs and however much oil the box requires; if it calls for water, don't add the water), instant pudding, Mountain Dew, and lime juice into a large mixing bowl. Make sure you mix it very well. About the lime juice, I added something like a third of a cup. It's not required, but I thought it added a little tang.

  2. Step 2

    Now throw in some green food coloring. Try to put in just a little bit, mix it all up, and if you want it darker, then put some more in. You can't make the mix any less green if you add too much! Mix it up very well, so you don't get any yellow spots (unless you want those!).


  3. Step 3

    Spread your mix into whatever sort of pans you like, and throw them in the oven! Make sure you keep an eye on them, I almost burnt mine. They might not require as much time as the box says, check by sticking a toothpick in the middle. If it comes out clean, take your cake out of the oven.

  4. Step 4

    Leave your cake out to cool in the pan for about 20 minutes; go do whatever you like for a little while. At this point, I'm going to say that I suggest using non-stick spray on your pans. Moist cake tends to stick, and mine came out in different chunks. After a good 20-30 minutes of cooling in the pan, plop the cake onto a plate or cooling rack, and let it cool (with the top of the cake up). While you're letting that cool out of the pan, open your frosting (I have cream cheese, but you can use whatever you like, or whatever you think will taste best), dump it into a bowl, and add some green food coloring to it. Mix it well.


  5. Step 5

    If your cake is completely cooled, spread the icing on, and decorate however you like.

    Yes, I know, my cake is not very attractive, but I can assure you it's the tastiest cake I've ever baked, and I'm proud of it. It is EXTREMELY moist, so if you like the way the cake looks just by itself (no frosting or whatever), that's fine.
