Easy molecular cooking
This molecular salad doesn't only look great...it tastes dilicious!
and it is very easy too!

  • Step 1

    Put a tray of olive oil or other vegetable oil in the freezer for half an hour (till cold not frozen)

    Put a bag of rocket salad in to the blender.
    Add 3/4 cup of water and mix till liquid.
    Add teaspoon of agar agar and mix well.

  • Step 2

    pour the green rocket liquid in a pan and bring to a boil.
    in another pan bring 1 cup of balsamic vinegar to a boil and add half a teaspoon of agar agar.

    stirr well while boiling for few minutes.

  • Step 3

    attach the tube to the syringe. hang the end of the syringe in the warm rocket liquid and pull the syringe till the tube is full of liquid.
    let the tube rest for a few minutes in cold water.

  • Step 4

    take your ice cold oil.
    fill the pipette with the balsamic liquid and drip little drips in the cold oil. let them harden for a minute till serving.

  • Step 5

    plate up:
    attach your syringe to the tube again and press air into the tube, this way the spaghetti will come out of the tube.
    lay a slice of tomato and mozzerella with salt and pepper in the middle of the plate with the spaghetti surrounding it. put some balsamic caviar on top and finish off with some pine nuts.
    drizzle some olive oile over the plate

    voila!
