One weekend when my friend came over we decided to make these. they are very easy to make, and look soooo cute! i made two different sized pies. the one in the picture is the small version i made, i was going to put a picture of both, but i started this late at night , so i was going to take pictures and finish it the next day, and now im here finishing it, and someone ate the last bigger mini pie!! but i guess thats what happens when you leave something delicous out on the kitchen table:P so if you would like to learn how to make these super simle, but adorable little pies, read on!
*REMEMBER* you dont have to use apples, you could make your own filling made out of pumpkin, strawberries, rhubard, blueberries, WHATEVER! just remeber that you dont just change the apples in this recipe to a different fruit, you would have to have a toally different filling recipe
Preheat oven to 325 degrees farenheit, then take out you tart shells or dough if it is frozen so it can unthaw. Take out your apples and dump them into a large bowl. Add in all of the sugar (brown and white), and mix everything together. you dont need to put the same amounts as i did, if you feel thats too sweet, you can add less, and if you think its not sweet enough add more. the measurements i put are just estimates, because i first put in 3/4 cup of each, then added a little more, as i felt it was kind of sour. it also depends on how much apples you used, thats why i didnt add a measurment for the apples.
ALSO: if there is any liquid at the bottom of the bowl, you can just drain it out in the sink.
After everything is mixed, you are going to add in the flour. Again, like i said in the step above, it depends on how many you are making, and how much apples you are putting in. So after you add the flour, stir the mixture, and while you are stirring, add in the nutmeg and cinnamon.

Now that you've made the filling, (if you are using homemade dough or dough you bought, that isnt already put into tart tins, make that now, and place them in your tart tins.
i used store bought tart shells that were already put in the tins for me. here is a picture of the tins they came in.... (since i used two boxes of tart shells that were two different brands, they came in different sizes. the smaller one is from the brand "Tenderflake" and the other one is from the brand "Selection".
BEFORE YOU START THIS NEXT STEP YOU HAVE TO READ THIS...since you are making mini pies and not tarts, you nee to divide your pie shells into 2 different groups and only fill the pie shells in one of the groups because the other ones will go on top of the other ones to make the pie top.
Now that you have you pie shells ready to be filled, take your filling and use a spoon to place the filling inside the tart shells. Once your pie shells all filled, take your melted butter, and with a teaspoon, drizzle about one tsp. over each pie.
Now take all of your "pie tops" and take them out of the tins and place them on a paper towel or a plate. One by one, take you mini pies and place a pie top over top of your pies, then pinching the edges to hold them together, as you would for a normal sized pie.
Once you have all of your pies covered, take a paper towel and dab it into the milk, then rub it on top of your pies. this will make your pies a crispy golden-brown colour. Take out a knife, and cut an x in the middle of the pie, or just poke it with a fork. Your pies are now ready for the oven! bake them for about 30-45 minutes, maybe longer, or shorter, depending on your oven. when they are golden-brown, on top, they are most likely ready.
