My mom's boyfriend from ages ago taught me this, and while he is long gone, this recipe has stuck around. Perfect with left over mashed potatoes, this is really easy to put together, and to make many. Most don't think this will be very tasty until they taste it :)

Description

My mom's boyfriend from ages ago taught me this, and while he is long gone, this recipe has stuck around. Perfect with left over mashed potatoes, this is really easy to put together, and to make many. Most don't think this will be very tasty until they taste it :)

Instructions

  1. Small img 1488 1263022651

Dish out some of your left over mashed potatoes into a microwave safe bowl. For two eggs, about 1/4 to 3/4 of a cup will fill your omelet.

  2. Small img 1491 1263022830

Microwave your potatoes so that they are hot, about 1.5 to 2 minutes. And yes, I took a picture of my potatoes microwaving XD

  3. Small img 1494 1263022875

Beat 2 eggs, add salt and pepper to taste.

  4. Small img 1499 1263022948

Melt a bit of butter in a small pan on medium heat.

  5. Small img 1500 1263023056

Once the butter has been heated, pour the beaten eggs into the pan.

  6. Small img 1503 1263023303

While the eggs are cooking in the pan, grate a bit of cheese. Cheddar works best, but I wasn't sure how old mine was o_O So I just made do with some Parmesan. Add as much or as little cheese as you want. This is about... 1/2 a cup? Dunno, just grate as much as you want to eat XD

  7. Small img 1505 1263023556

Once the egg has cooked through on the bottom, flip it over.

  8. Small img 1506 1263023606

Smoosh the hot mashed potatoes onto half the omelet. Sprinkle 2/3 of the cheese you grated onto the potatoes.

  9. Small img 1507 1263023712

Close the omelet and sprinkle the remaining cheese on top.

  10. Small img 1508 1263024172

Cover and reduce heat to low, to allow the cheese to melt.

Remove from pan, and serve :) Enjoy!
