Spread the sweet pumpkin love
Autumn always makes me crave food made with pumpkin. These cakes take it a bit father... Grab a little kid to help with the decorating!

  • Step 1

    Begin by making your icing:
    Blend softened cream cheese, pumpkin puree, 1/2 tsp. vanilla, 1/4 tsp. nutmeg, orange zest and powdered sugar until smooth. If you want this to be very orange, add a drop of food coloring before putting it into the fridge.

  • Step 2

    Make your cake:
    - Preheat oven to 350 degrees and mix all remaining dry ingredients

  • Step 3

    Add wet ingredients and blend.

  • Step 4

    Pour into ungreased muffin tins and bake for 20 - 25 minutes.

  • Step 5

    Cool completely before frosting. Add a pretzel stick to the center and decorate with green icing to create vines and leaves.
