    Step 1

    Preheat oven to 180•c or 160•c for a fan forces oven.

    Line a muffin tin with 10 cupcake papers.

    In a bowl with electric beaters, mix egg, sugar and butter together until combined well

    Now mix half the flour and milk, mix, then repeat with remaining flour and milk until well combined. Then add 2 tablespoons of lemon curd, mix well.

    Place one spoon full of mixture into cupcake liners, then on top of the mixture add one teaspoon of lemon curd on each one

    Then top with another spoonful of the cup cake mixture

  • Step 6

    Place in oven for 15-20 minutes or until firm to touch.

    Remove from oven and leave to cool.

    Melt remaining butter and spoon over top of cupcakes, then sprinkle with remaining sugar. If desired you can squeeze 1/2 if a fresh lemon over all ten cupcakes

i could eat Lemon Curd on just about anything. Love this recipe, I will have to adapt for my Gluten allergy... Thanks for sharing!!!!!

Thanks for the comment, sorry I couldn't help you out with a gluten free recipe. But as I not gluten intolerant, I don't really think about it. You have inspired me to try some gluten free recipes so thank you XD

Gluten free foods are amazing, you never realize how pasty wheat tastes. with out wheat its like you get the true taste of the food or ingredients. Its actually really healthy for you also. GF baking flour is usually cup for cup, so i will just change out reg flour for GF. Poof, AMAZING!!!!! I will let you know how they turn out
