Warm up with a delicious an individual hot cross bun and spiced rum infused bread & butter pudding.
A seasonal twist on the bread & butter pudding, this hearty dessert is layered with buttered hot cross buns, fruit doused in Lamb's Spiced Rum and sprinkles with lots of delicious spices and brown sugar.

Step 1Butter the bottom of each of your pie dishes.

Step 2Slice the tops off the hot cross buns and then slice the bottom of the bun in half again. Butter the tops of each slice and the underside of the cross top of the buns and place to the side for the moment.

Step 3Tear the first slice up and place in the bottom of your pie dish. Top with a handful of dried fruit and dust with brown sugar and cinnamon. Drizzle with a generous splash of rum.

Step 4Repeat the previous step with the second slice of bun.

Step 5Whisk together the egg and brown sugar until light and fluffy.

Step 6Gently heat the milk and cream together.

Step 7Pour the cream into the eggs.

Step 8Whisk together with two tablespoons of rum.

Step 9Pour the custard into your pie dishes and sprinkle with brown sugar and cinnamon. Leave to set for a little while.

Step 10Place the top of the hot cross buns on top of your puddings just before baking.

Step 11Bake in a hot oven at 180'C for 40 minutes and serve hot.
